More complicated than Rick Gallop's book, but worth a look if you want to understand insulin mechanism and its effect on health.
Rick Gallop's Diet Green_Light CookBook: 100 Green-Light Helathy Eating Recipes and Lifestyle Tips (external link)
An excellent cookbook for those who are eating to balance blood sugar levels, and for anyone who wants to minimise their risk of developing insulin resistance, adult-onset diabetes, heart disease and stroke (so that’s all of us, then). Just be aware that the book ignores one healthy eating golden rule: the jury’s out on the harmfulness of artificial sweeteners, so choose fructose (natural fruit sugar with a low GI of 19) instead of aspartame etc, and avoid food with added artificial sweeteners if you possibly can. This means that diet sodas and diet yoghurts etc are out.
